Apple Chai Shrub

For the shrub: 

1 Cup Of Grated Red Apples (About 1 medium apple)
1 Cup Of Apple Cider Vinegar
½ Cup Of Brown Sugar
½ Cup Of White Sugar
4oz Dona Chai Concentrate

For the cocktail: 

1oz Chai Apple Cider Shrub
2oz bourbon
Dash bitters
Sparkling water

Step one: Make the shrub

Combine grated apples, apple cider vinegar, brown and white sugars, and chai concentrate in a jar. Stir, then cover and place in the fridge for 2 or 3 days. After a few days, strain the shrub. 
Step two: Make the cocktail
Combine 2 oz bourbon with 1 oz Apple Chai Shrub & bitters in a glass over ice. Top with sparkling water & serve.
