For the syrup:
- 8oz honey (1 jar) Coffee Blossom Honey
- 25 g Amber Assam tea
- juice from 1/4 orange or 1/2 lemon
For the cocktail:
- 0.75 oz syrup
- 1.5 oz whiskey
- 1 dash bitters
- orange twist
Step one: Make the syrup
Put the honey & Amber Assam tea in a pot. Add 8oz of water. Bring to a simmer and stir to dissolve the honey. Turn of the heat and let sit for 5 minutes. Strain through a fine mesh sieve. Squeeze in the citrus. Stir.
Ps - this Amber Assam Honey Simple Syrup will keep in the fridge for one week.
Step two: Mix the cocktail
Combine the whiskey, bitters & Amber Assam Honey Simple Syrup. Pour into a rocks glass over ice. Garnish with a twist of orange.
