Banana bread with chai cream cheese frosting

Banana bread with chai cream cheese frosting

Banana Bread

     1 1/2 cups flour
     1 teaspoon baking soda
     1/2 teaspoon salt
1 stick unsalted butter, room temperature
     1 cup sugar
     2 large eggs
1 cup mashed very ripe bananas, about 2 large
     1/2 cup sour cream
     1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans

Chai Cream Cheese Frosting

1 stick unsalted butter, room temp
4 oz cream cheese, room temp
     1/4 cup Dona Masala Chai
     1 1/2 c powdered sugar
     A pinch of salt

For the banana bread:

  1. Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. Cream butter and sugar until light and fluffy. Add the eggs and beat to incorporate.

  2. In a medium bowl, mix together the flour, baking soda, and salt. Slowly add in to the butter mixture until just combined.

  3. Add bananas, sour cream and vanilla. Once combined, pour into the prepared loaf pan.

  4. Bake until a cake tester inserted in the center of the cake comes out clean, about 1 hour to 1 hour and 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool completely.

For the chai frosting:

  1. Beat the cream cheese and butter until light and fluffy.

  2. Add powdered sugar and continue to mix.

  3. Mix in the Dona Chai Concentrate and pinch of salt until uniformly combined.

  4. Spread in a generous layer over the top of the completely cooled banana loaf.
