Cold Brew

The gentle cold brewing process allows for a smooth extraction of flavor while eliminating any chance of bitterness or astringency. The result is a perfectly extracted iced tea that is refined, refreshing & the easiest to make.

This recipe yields 2-3 cups of iced tea. For a single serving, cut the recipe in half.

Ingredients

4 tablespoons of loose leaf tea or 4 Sachets

24 oz (or 3 cups) room temp or cold water

Directions

  1. Pour 24 oz. of purified, room temp. water into a pitcher
  2. Add 4 Sachets Dona Tea 
  3. Cold steep overnight in the to extract the optimal flavor 
  4. Remove the sachets and serve over ice

 

Flash Brew

Flash brew is a method of brewing when you don’t have the time to wait overnight for an iced cold drink and need one NOW. To flash brew tea, steep a large volume of tea hot, and pour over ice or into cold water. In contrast to cold brewing, the higher water temperature extracts different flavor notes in the tea. 

Directions

  1. 8 oz cup of hot water
  2. 1 tbsp loose leaf 
  3. Steep 30 sec, pour over ice

 

Sun Tea

Sun tea is the most laid back and summery way to make iced tea–no need for precise measurements or fussy water temps. The sun tea steeping method calls for a casual amount of tea in water (go heavy, you can always add cold water or extra ice to your tea), then a countertop, windowsill, or outdoor steep. While steeping, taste as you go, there are a lot of factors that contribute to the perfect brew time. 

Directions

  1. 1 Quart/Liter of water in a glass jar/pitcher
  2. 8 sachets/8 tablespoons loose leaf
  3. In a large pitcher, add 1 liter of water and 8 sachets. 
  4. Cover the pitcher and forget about it in the sun for 2-3 hours if it's hot out and a little bit longer if it's cooler.
