Chai Spice Knot

With the crazy changes in everyday life due to COVID-19,  we're all spending more time at home -- but social distancing doesn't have to be boring. It's time to bake in your downtime! Try this chai spice know recipe by @theisabelsoto! 

 

 

160g Milk

28g Unsalted Butter

1 egg

100g starter

300g All-Purpose Flour

3g Salt

42g Honey

DONA Zero Waste Spice Dust

 

Directions:


Heat the milk and butter together (either in the microwave or on the stove). Mix together the milk, butter, starter, sugar, and whole egg.

Next you want to add the salt and flour (you can do this by hand or in a mixer at a low setting).

The dough will form a nice round ball, making sure you incorporate as much of the flour into the ball. You never want to leave clumps of flour or dough on the sides of the bowl! Now you can cover the bowl with a damp towel, and allow it to rest for thirty minutes.

After the dough has rested for thirty minutes, either knead by hand or place it under a mixer again at low speed.


Transfer the ball of dough into a new bowl, cover it with the damp towel from before, and let it rest for ten hours. Ideally, the dough should be in an environment of seventy degrees fahrenheit. If your kitchen is cooler than that, allow the dough to sit for one or two extra hours!


(A ten hour bulk rise later!)


Remove the dough from the bowl and onto a lightly floured surface. With a floured rolling pin, begin rolling the dough into a rectangle. Begin sprinkling an even coat of Dona Spice Dust, brown sugar(or maple syrup), and chocolate powder on the rectangle.

Now begin rolling the dough into a tight log. Place the log on a baking sheet or silicone mat ( ith the seam side on the bottom), and place it in the freezer for five minutes. After the five minutes, take a sharp-serrated knife and cute the log longways down the middle. Make sure one of the two sides stays intact! That will be your starting point when you start to overlap the two sides.  Keeping the open layers facing up, you want to overlap the two sides. Make sure each movement is pretty tight so the twist doesn't lose its shape. When you get to the end, bring it around to the top part of your twist- to essentially form a circle- and tuck in the open-end UNDER the first-end. This should look like a knot!


Cover the knot with your towel for thirty minutes and let it rest. You may notice a slight increase in size.


(Preheat your oven to 400 degrees fahrenheit)


Place the knot into your oven for twenty minutes. Then reduce the heat to 350 degrees fahrenheit and bake it for another ten minutes.


While the knot is cooling, take four tablespoons of honey and heat it up in the microwave for 10-15 minutes (or until it is runny). Take a brush and lightly coat the knot with honey. Let it cool for twenty minutes and ENJOY!
