Turmeric-spiced banana walnut muffins

Recipe (Makes 8)


3 ripe bananas
1 1/2 cup whole wheat pastry flour
1 egg
1 tsp vanilla
1 tsp baking soda
1 cup chopped walnuts
1/4 cup date sugar
1/2 cup DONA Turmeric Concentrate
Dash salt

1. Set oven to 350F.
2. Mash bananas well.
3. Mix in other ingredients, add to muffin tin sprayed with coconut oil. 
4. Bake for 25 minutes.
5. Gently remove immediately from tin to cool- they should pop out easily. I think this is an important step because when a muffin cools in-tin, it’s subject to all that moisture that we don’t want!
6. Store in a sealed container room temp. Enjoy! (I topped mine with some sunflower seed butter).
