Matcha Mochi Cake

Ingredients

42 grams (about 1/4 cup) butter melted and cooled

1.5 cups rice flour

1 tsp baking powder

2 eggs

1 cup sugar

1 can light coconut milk

1.5 tsp vanilla

2 tbsp First Flush Ceremonial Matcha

Sprinkle of sea salt


Directions

Whisk sugar and eggs on high, then add coconut, butter, vanilla. Mix dry ingredients together and combine. 

Pour batter in lined pan and remove bubbles by tapping and waiting.

Bake at 350 for 45 minutes to an hour, until it bounces. It should be light but dense.

Dust with powdered sugar and matcha.
