What is your relationship with tea in your work?
In pastry, tea has a way of rounding out and bringing depth to flavors. It’s inherent
earthiness tends to tame the sweetness of sugar over all which is really important to me
when I am conceptualizing a new dessert. Teas are such a broad category of flavor and it is always my goal to open up people’s perspective of what desserts tastes like.
What significance does tea have in your life?
Tea has always been something to consume in a moment of need for comfort. Whether I am sick, stressed, anxious, etc. it has always been a medicinal remedy to bring me back to myself.
Share a tea memory & its significance to you.
My favorite tea memories have all happened while I was traveling. Freshly made chai served to me and my sister while we shopped in Mumbai. A cup of black tea with milk after a long day of work in the garden of my friend’s mother’s home in Scotland. Watching my host lift her arm high in the air creating long dramatic pours of mint tea while enjoying breakfast in a riad while traveling in Marrakesh. Little sachets of green tea carefully set out in the ryokans I stayed in all over Japan.
Each gesture was made to make me feel comfortable, catered to, cared for and at home. Tea has a way of doing that <3
