For our first edition of What's Brewing?, we sat down with Brooklyn-based baker and Heirloom Supper Club founder Madison Scott to talk cake, community, and what's inspiring her this season.
First tea of the day
In the winter, Earl Grey with honey and a bit of oat milk! in the summer, I tend to go for an iced matcha, ideally with Dona brown sugar coconut syrup.
Last tea of the day
I’m a big fan of a light herbal tea before bed. My favorite is Still Life, the spices have a lovely depth and make for a cozy evening in bed.
Loose leaf or sachet
Loose leaf all the way! I love using a french press or strainer for my tea, I feel like the flavor’s infuse better. It’s also so beautiful to be able to see the individual components of the teas. Loose leaf is always best for baking too, easy to infuse or powder to incorporate into baked goods!
Black, green, white or herbal
Yes to all of the above. I don’t think I could pick a favorite, they all have special elements about them, I think that’s what makes tea so interesting.
Iced vs Hot
I love iced drinks. My acupuncturist scolds me but they’re just so good!!
Go-to iced order
Iced London Fog - underrated!! or Iced Matcha with a fun twist. I love brown sugar coconut syrup or spooning in a bit of fresh strawberry jam.
Milk? Cow, oat or otherwise
Since I’m a baker and always have milk in the fridge, 90% of the time it’s cow. I do love the rare occasions I have oat milk on hand! It’s a special treat.
Tea that reminds you of somewhere
A classic - the Dona Chai Concentrate. I lived in North Carolina as a teenager and my favorite cafe served this. Each time I have it, I feel transported back to another era of my life.
Controversial tea take
I love “hamming up” my tea to intensify the flavors. Adding fresh ginger, giving spices a light roast before adding water, steeping with gogi berries or bits of apple and pear.
Tea that aligns with your personality best
Marrakesh Black Tea with Mint - light and refreshing, yet rejuvenating! This tea never gets old.
A cup of tea goes best with ______
I’m American but dare I say a biscuit …. by that I mean a cookie or scone or some sort of dry-ish pastry. My favorite is a poppyseed hamentashen with a cup of Earl Grey tea.
The best location for a cup of tea
My backyard, early in the morning. I’m so lucky to be able to listen to the birds and nature around me before a busy day in the city.
